Here are the six exceptional peppers we've carefully selected* for you:

Timut berries, Cumeo berries, Baies des Cimes from Vietnam, Maniguette berries from Guinea, Cubeb tailed pepper from Indonesia and Voatsipériféry wild pepper from Madagascar.


Fine chocolates to be enjoyed slowly to let the flavors develop one by one.



Suggested tasting order:


Maniguette berries: Sweet almond berries from Guinea in a Honduras** chocolate ganache.

Cumeo berries: Vietnamese berries, with lemon and lemongrass aromas, in an Ucayali** chocolate ganache.

Cubeb pepper: Native to Indonesia, with typical lemony aromas, in a Ucayali** chocolate ganache.

Poivre sauvage Voatsipériféry: Madagascar wild pepper with minty aromas, in a Nicaruja** chocolate ganache.

Baies des Cimes: Vietnamese berries with mandarin aromas, in a Ucayali** chocolate ganache.

Mathilde's choice of peppers was the result of a love-at-first-sight visit to Jardin des Épices, a creator of spice blends discovered by chance during a recent visit to her native Alsace. Beyond the expertise and attention paid to the products, Mathilde was seduced by the company's approach, which favors small-scale producers, focusing on the quality of the crops and the quality of life of the artisans.

Ucayali, Honduras, Madagascar and Nicaruja chocolates are roasted by Chaleur B Chocolat, a Quebec company based in Gaspésie, which works with distinctive cocoa beans grown by small-scale producers carefully selected for their love of the land and respect for people.
