Native to Mexico, chia is an annual herbaceous plant in the Lamiaceae family, whose seeds were the staple diet the diet of pre-Columbian Amerindians. Ignored for centuries, these seeds are now prized by nutritionists. Rich in omega-3 fatty acids and antioxidants (myricetol, quercetol, kaempferol, flavonol glycosides, chlorogenic acids and caffeic acid), they are also a good source of calcium, phosphorus and a very good source of manganese. Consumption of chia may help to lower blood triglycerides, increase HDL (the good cholesterol), lower blood pressure and improve blood sugar levels.
