What is Apothicari Fire Vinegar?
Apothicari fire vinegar is an organic, unpasteurized apple cider vinegar in which aromatic herbs such as ginger, turmeric, garlic, onion, horseradish, cayenne pepper and a blend of garden herbs are macerated for several weeks. It's an artisanal product whose ingredients are mostly grown on our organic farm, Les Jardins de la Minga, in Baie-St-Paul, Charlevoix. We call it ''Culinary Tonic'' because it's an exquisite and versatile flavor concentrate to add to vinaigrettes, marinades, sauces, soups, mayonnaise, croutons, Bloody Caesars, etc.
A unique local product
In addition to our fields, our caterpillar tunnels and two electrically heated greenhouses enable us to grow all the macerated ingredients of Apothicari Fire Vinegar directly on the farm, from the more common garlic and onions to the more exotic ginger and turmeric. When the season doesn't allow for a harvest that follows our Fire Vinegar production, Quebec organic producers are always given priority, because at Apothicari, as at Jardins de la Minga, concern for the environment and quality are important values to us. That's why it's so important for us to offer a product with organic, local ingredients, whose quality gives Apothicari Fire Vinegar such a unique taste.
Product history
Apothicari Fire Vinegar is a recipe inspired by fire cider, a remedy created by herbalist Rosemary Gladstar in the late 1970s. Since every ingredient in it is recognized for its health benefits, it was used as an immune tonic for the whole family. I used to make it for friends and family, but it wasn't until 2022 that we decided to fine-tune the recipe to make a culinary tonic. The same ingredients, the same benefits, but the unique taste recipe makes it extremely versatile in the kitchen.
