product is one of our best sellers and one of our best health breads. It is
integral, fermented and one of the few breads on the market made exclusively
from spelled flour. Its nutty taste is unique.
It
is an interesting alternative to traditional wheat. In fact, along with our
other spelled and buckwheat bread, it is the only baking alternative in Canada
for people on a low FODMAP (Fermentable Oligo-, Di-, Mono-saccharides And
Polyols) diet. It is the antithesis of our prebiotic bread which, on the
contrary, is supplemented with inulin.
Spelled
(triticum spelta) is an ancestor of common wheat. It was known and cultivated
in ancient Egypt and is frequently mentioned in the Bible. This cereal is not
very productive but lends itself well to organic farming. Its grain has the
particularity of being enveloped in a lemma that must be shelled before use.
This cereal with great dietary benefits but not very productive has been
neglected over time in favor of other high-yielding cereals (wheat, corn,
rice).
Spelled
is interesting for its exceptional nutritional values. This cereal is very rich
in protein, but also in magnesium, zinc, iron and copper. Its proteins are
richer than those of other cereals in lysine, an essential amino acid. Spelled
also contains thiocyanate, a substance that boosts the immune system. Spelled
is indicated to treat a host of ailments including diarrhea, colic, intestinal
disorders, Crohn's disease as well as melancholy and depression.
Like other varieties of wheat, spelled contains gluten but is low in glutenin; this is what explains the lack of elasticity of the slice of bread and its drier taste.
