Buckwheat (Fagopyrum esculentum) is not a grass and is gluten-free. Therefore, its pure flour is not suitable for breadmaking. It must therefore be mixed with wheat or rye flour. In this case, it is mixed with spelled flour. This is why it is low in FODMAPs.
