Description
Our organic non-pasteurized rice miso is a gluten-free, multi-purpose condiment, mild in taste, full bodied and slightly salty. It has undergone a natural, uninterrupted fermentation process of at least 2 years. It contains only certified non-Gm organic ingredients:
• Whole grain semi polished arborio rice from Italy. Having tried several types of rice from various parts of the world we opted for the round grain rice that lends itself best to fermentation and gives our miso its unique flavor.
• Sea salt.
• Natural spring water.
The grain is inoculated with Aspergillus oryzae and lactic bacteria such as Pediococcus halophilus and Lactobacillus delbruekii.
