A real bread without wheat

In addition to wheat, rye is the only other cereal whose flour is suitable for breadmaking. This product is made solely from wholemeal rye flour. It does not contain any wheat or yeast. It is therefore ideal for people allergic to wheat. We end up appreciating its very pronounced taste and very dense texture. Try it grilled with maple syrup or with cream cheese and smoked salmon!

Rye (secale cereale) is also an ancestral grain. It is rich in fiber, antioxidants and minerals (especially manganese and selenium). Its effectiveness is demonstrated to prevent cancer, heart disease, type 2 diabetes and intestinal diseases.

Rye contains gluten but not gliadins, the allergenic portion of wheat gluten. In addition, the gluten content is much lower; this is what explains the lack of elasticity of the slice of bread and its density. Many of our mildly gluten intolerant customers have adopted this bread as an acceptable substitute.
