Chinese cabbage or bok (pak) choy (choï) (Brassica rapa L. subsp. chinensis) is a herbaceous plant of the Brassicaceae family, cultivated as a vegetable for its stems and leaves, which are consumed as a vegetable.
Bok choy is one of the many varieties of Chinese cabbage found in Asia. In the United States, bok choy is thought to have been introduced by the Great Gold Rush at the end of the 19th century. What I love about this variety is that you can remove the leaves and it will grow back, and you can even leave it to grow, and you can even eat the flowers, but ideally pick them before they bloom, so that they grow back.
It's best grown in the summer months, and tolerates autumn and our cold winters in an outdoor greenhouse or cold frame.
I love to cook this variety in sautés, soups, salads and even lacto-fermentation.
Our seeds are vigorous, open-pollinated and adapted to the Quebec climate.

Sowing: Early April-May (sow consecutively every 3 weeks until September and in October in an outdoor greenhouse or cold frame greenhouse to get the best results). or cold frame greenhouse to have this vegetable during winter with garden cover in the greenhouse)
Seeds: 3 seeds per cell or pot in April. From mid-May, plant seeds directly in the ground.
