Named best Canadian cheese in 2014 by the Canadian Fine Cheese Contest, this organic, semi-soft, washed-rind cheese is made from pasteurized milk. It benefits from a aging period of 45 days. Under its orange rind hides an ivory paste with a creamy texture and soft farmhouse aromas of butter and herbs. On the palate, it is unctuous and melting. It tastes of hazelnut, cream, butter and also has a clover note on the finish. Its flavor is slightly acidic and salty, without bitterness.
